  • 4 cups cubed stale banana bread
  • 2 ripe bananas sliced bananas
  • 2 cups milk
  • 1 cup heavy cream
  • 3 large eggs eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Whisk milk, cream, eggs, sugar, vanilla, cinnamon, and salt until combined.
  3. Add banana bread and bananas; fold gently. Stir in nuts if using.
  4. Pour into greased dish and bake for 45-55 minutes until golden.
  5. Cool slightly before serving. Enjoy warm or at room temperature.

Notes

Using stale bread helps absorb the custard better.
