- Preheat oven to 350°F and prepare a loaf pan.
- Cream butter and sugars, then add eggs and vanilla, mixing well.
- Stir in mashed bananas, then add dry ingredients and mix until combined. Fold in sour cream and nuts if using.
- Pour batter into pan and bake for 55-65 minutes, checking with a toothpick for doneness.
- Cool completely before slicing. Store at room temperature for 2 days or freeze for longer storage.
