Method
- Preheat oven to 350°F and prepare a loaf pan. Toast nuts if using.
- Cream butter and sugars, then add eggs and vanilla. Mix in mashed bananas.
- Mix dry ingredients: flour, oat flour, baking soda, baking powder, salt, and optional spices. Combine with wet ingredients and fold in sour cream and nuts if desired.
- Pour batter into prepared pan and bake for 55-65 minutes until a toothpick comes out clean.
- Cool completely before slicing. Store at room temperature for 2 days or freeze for longer storage.
Notes
Optional spices and nuts enhance flavor but are not essential.
