Method
- Preheat your oven to 350°F.
- Scrub and thinly slice the Yukon gold potatoes.
- Melt butter in a saucepan, sauté onion and garlic until soft.
- Stir in flour, then gradually add milk and chicken broth. Cook until thickened.
- Remove from heat and stir in all three cheeses until combined.
- Layer potatoes and cheese sauce in a greased casserole dish.
- Cover and bake for 30 minutes, then uncover and bake for 35–45 minutes until golden brown.
Notes
For extra flavor, add a pinch of nutmeg to the cheese sauce.
