  • 2.5-3 lbs Yukon gold potatoes thinly sliced
Cheese Sauce
  • 1/4 cup butter
  • 1 medium onion diced
  • 8-10 cloves garlic minced
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 3/4 cup Parmesan cheese grated

Method
 

  1. Preheat your oven to 350°F.
  2. Scrub and thinly slice the Yukon gold potatoes.
  3. Melt butter in a saucepan, sauté onion and garlic until soft.
  4. Stir in flour, then gradually add milk and chicken broth. Cook until thickened.
  5. Remove from heat and stir in all three cheeses until combined.
  6. Layer potatoes and cheese sauce in a greased casserole dish.
  7. Cover and bake for 30 minutes, then uncover and bake for 35–45 minutes until golden brown.

Notes

For extra flavor, add a pinch of nutmeg to the cheese sauce.
