  • 6 medium potatoes peeled and thinly sliced
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 cups shredded cheddar cheese divided
  • 1 cup cooked and crumbled turkey bacon
  • 1/4 cup chopped green onions

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Melt butter in a saucepan. Whisk in flour, then milk until smooth.
  3. Bring to a simmer, stirring constantly. Cook until thickened, about 5-7 minutes.
  4. Remove from heat and stir in salt, pepper, garlic powder, and 1 1/2 cups of cheddar cheese until melted.
  5. Layer half of the potatoes in the dish. Pour half of the cheese sauce over the potatoes.
  6. Top with the remaining potatoes and cheese sauce.
  7. Cover with foil and bake for 1 hour.
  8. Remove foil and sprinkle with remaining cheddar cheese and turkey bacon.
  9. Bake uncovered for 15-20 minutes, until potatoes are tender and cheese is melted.
  10. Garnish with green onions before serving.

Notes

For a richer flavor, use a blend of cheddar and Gruyere cheese.
