Cheesy Scalloped Potatoes and Ham

  • 6 cups sliced potatoes peeled and thinly sliced about 1/4 inch thick, about 5-6 large potatoes
  • 2 cups turkey ham diced or cut up leftover turkey ham
  • 2 teaspoons salt divided
  • 1 teaspoon pepper divided
  • 4 tablespoons butter
  • 0.25 cup flour
  • 2 cups shredded cheddar cheese divided
  • 2.5 cups milk 2%
  • 1.5 teaspoon dried parsley divided
  • 1 tablespoon fresh chives divided or 1 teaspoon dried chives

Method
 

  1. Place sliced potatoes and turkey ham in a bowl. Season with 1 teaspoon salt and 1/2 teaspoon pepper. Mix well.
  2. Melt butter in a saucepan. Add flour and whisk. Add 1 cup milk and 1 1/2 cups cheese, then remaining milk slowly. Boil, add remaining salt, pepper, 1 teaspoon parsley, and half the chives. Remove from heat.
  3. Preheat oven to 350 degrees.
  4. Spray a casserole dish. Layer half the potatoes and ham, then half the cheese sauce. Repeat.
  5. Cover with foil. Bake for 75-80 minutes.
  6. Test potatoes for tenderness. Remove foil, sprinkle remaining cheese, parsley, and chives. Bake 15 more minutes.
  7. Serve and enjoy!

Notes

For a richer flavor, use a blend of cheddar and Gruyere cheese.
