  • 2 pounds Yukon Gold Potatoes peeled and cut into chunks
  • 1 cup Mayonnaise
  • 1 tablespoon Dijon Mustard
  • 3 Hard-Boiled Eggs peeled and chopped
  • 1/2 cup Celery diced
  • 1/4 cup Green Onions sliced
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Salt or to taste
  • 1/2 teaspoon Black Pepper or to taste
  • 1/4 cup Sweet Pickle Relish

Method
 

  1. Boil potato chunks until tender, about 10-12 minutes. Drain and cool.
  2. Boil eggs, cool in ice water, peel, and chop finely.
  3. Whisk together mayonnaise, Dijon mustard, vinegar, salt, and pepper.
  4. Fold potatoes, eggs, celery, onions, and relish into the dressing.
  5. Refrigerate for at least 2 hours. Serve chilled.

Notes

For a tangier flavor, add a splash of lemon juice.
