Method
- Boil potato chunks until tender, about 10-12 minutes. Drain and cool.
- Boil eggs, cool in ice water, peel, and chop finely.
- Whisk together mayonnaise, Dijon mustard, vinegar, salt, and pepper.
- Fold potatoes, eggs, celery, onions, and relish into the dressing.
- Refrigerate for at least 2 hours. Serve chilled.
Notes
For a tangier flavor, add a splash of lemon juice.
