Ingredients
  

Salad
  • 2 cups fresh sweet corn kernels about 3 medium ears
  • 1 cup red bell pepper diced
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
Dressing
  • 2 tablespoons lime juice freshly squeezed
  • 2 tablespoons extra virgin olive oil
  • to taste Salt and pepper

Method
 

  1. Shuck corn and cut off kernels.
  2. Dice red bell pepper, cucumber, and red onion.
  3. Combine corn, bell pepper, cucumber, red onion, and cilantro in a bowl.
  4. Whisk lime juice and olive oil; season with salt and pepper.
  5. Pour dressing over salad and toss gently.
  6. Chill for 30 minutes before serving.

Notes

For a spicier kick, add a pinch of cayenne pepper to the dressing.
