Ingredients
  

Salad
  • 2 cups elbow macaroni
  • 3 medium potatoes (Yukon Gold or Russet) peeled and diced into small cubes
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt more to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup finely shredded carrot
  • 1/4 cup finely chopped celery optional
  • 2 hard boiled eggs chopped (optional)
  • 2 tablespoons chopped fresh parsley for garnish

Method
 

  1. Cook macaroni until al dente, drain and rinse.
  2. Boil diced potatoes until tender, drain and rinse.
  3. Whisk together mayonnaise, sour cream, vinegar, sugar, salt, pepper, garlic powder, and onion powder.
  4. Combine macaroni, potatoes, carrots, celery (optional) with the dressing.
  5. Stir in chopped hard boiled eggs (optional).
  6. Adjust seasoning to taste.
  7. Garnish with chopped parsley.
  8. Chill for at least 1 hour before serving.

Notes

For a tangier flavor, add a bit more apple cider vinegar.
