  • 2 pounds Yukon Gold potatoes peeled and thinly sliced (1/8 inch thick)
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg freshly grated is even better
  • 1 cup shredded Gruyere cheese or Swiss

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9x13 inch baking dish with butter.
  3. Arrange a third of the sliced potatoes in the dish.
  4. Melt butter in a saucepan, whisk in flour, cook for 1 minute.
  5. Gradually whisk in milk, simmer until thickened (5-7 minutes).
  6. Remove from heat, stir in salt, pepper, and nutmeg.
  7. Stir in half of the Gruyere cheese until melted.
  8. Layer potatoes and sauce, repeat until used up.
  9. Pour remaining sauce over potatoes, sprinkle with remaining cheese.
  10. Cover with foil, bake for 30 minutes. Remove foil, bake 20-30 minutes until golden.
  11. Let rest for 10 minutes before serving.

Notes

Use a mandoline slicer for even potato slices, but be careful!
