Method
- Preheat oven to 375°F (190°C).
- Grease a 9x13 inch baking dish with butter.
- Arrange a third of the sliced potatoes in the dish.
- Melt butter in a saucepan, whisk in flour, cook for 1 minute.
- Gradually whisk in milk, simmer until thickened (5-7 minutes).
- Remove from heat, stir in salt, pepper, and nutmeg.
- Stir in half of the Gruyere cheese until melted.
- Layer potatoes and sauce, repeat until used up.
- Pour remaining sauce over potatoes, sprinkle with remaining cheese.
- Cover with foil, bake for 30 minutes. Remove foil, bake 20-30 minutes until golden.
- Let rest for 10 minutes before serving.
Notes
Use a mandoline slicer for even potato slices, but be careful!
