Method
- Soak diced red onion in cold water.
- Peel and dice potatoes into 1/2-inch cubes.
- Boil potatoes in salted water until tender.
- Drain potatoes, sprinkle with 1 tbsp apple cider vinegar, and cool.
- Mix vegan mayo, mustard, apple cider vinegar, celery seed, garlic powder, and salt in a separate bowl.
- Drain onions, add to dressing with relish and/or celery if desired.
- Pour dressing over potatoes and fold until mixed.
- Chill, garnish with green onions if desired.
Notes
For best flavor, chill the potato salad for at least 2 hours before serving.
