  • 1 small red onion diced
  • 2.5 pounds potatoes peeled and diced
  • 1 tablespoon apple cider vinegar
  • 1 cup vegan mayo
  • 2 tablespoons yellow mustard
  • 1 teaspoon apple cider vinegar
  • 0.5 teaspoon celery seed
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.5 cup dill pickle relish optional
  • 0.5 cup chopped celery optional - for a little crunch
  • 0.25 cup green onions for garnish (optional)

Method
 

  1. Soak diced red onion in cold water.
  2. Peel and dice potatoes into 1/2-inch cubes.
  3. Boil potatoes in salted water until tender.
  4. Drain potatoes, sprinkle with 1 tbsp apple cider vinegar, and cool.
  5. Mix vegan mayo, mustard, apple cider vinegar, celery seed, garlic powder, and salt in a separate bowl.
  6. Drain onions, add to dressing with relish and/or celery if desired.
  7. Pour dressing over potatoes and fold until mixed.
  8. Chill, garnish with green onions if desired.

Notes

For best flavor, chill the potato salad for at least 2 hours before serving.
