- Grease the crockpot with butter. Whisk together cream, milk, flour, garlic, thyme, nutmeg, salt, and pepper.
- Layer potatoes, ham, onion, cream mixture, and cheese in the crockpot.
- Repeat layering twice. Be gentle with the sauce.
- Cook on LOW for 6-7 hours or HIGH for 3-4 hours. Do not open the lid for the first two hours.
- Sprinkle remaining cheese on top during the last 20-30 minutes. Let it sit for 15 minutes before serving. Garnish with parsley.
