Ingredients
  

Salad
  • 2 cucumbers peeled, seeded, and diced
  • 2 ripe avocados pitted and diced
  • 1/4 red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
Dressing
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil

Method
 

  1. Combine cucumbers, avocados, red onion, and cilantro in a bowl.
  2. Whisk together lime juice and olive oil in a small bowl.
  3. Pour dressing over salad and toss gently.
  4. Season with salt and pepper to taste.
  5. Serve immediately or chill.

Notes

For a spicier kick, add a pinch of chili flakes to the dressing.
