Ingredients
  

Protein
  • 4 pieces boneless, skinless chicken breasts
Vegetables
  • 4 cups mixed vegetables (carrots, potatoes, bell peppers, broccoli)
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • 2 tablespoons olive oil

Method
 

  1. Heat olive oil and sear chicken 2-3 mins per side until golden.
  2. Place chopped onion and garlic in crockpot.
  3. Add vegetables on top of onions and garlic.
  4. Top with seared chicken, pour broth, and season with herbs, salt, and pepper.
  5. Cook on low 6-8 hrs or high 3-4 hrs until chicken is cooked and vegetables tender. Shred chicken and mix before serving.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
