Method
- Heat olive oil and sear chicken 2-3 mins per side until golden.
- Place chopped onion and garlic in crockpot.
- Add vegetables on top of onions and garlic.
- Top with seared chicken, pour broth, and season with herbs, salt, and pepper.
- Cook on low 6-8 hrs or high 3-4 hrs until chicken is cooked and vegetables tender. Shred chicken and mix before serving.
Notes
For extra flavor, add fresh herbs or a squeeze of lemon before serving.
