Ingredients
  

Cake
  • 1 box cake mix (vanilla or white)
Other
  • Ingredients listed on cake mix box (eggs, oil, water) as needed
  • 1 container vanilla frosting (12-16 oz)
  • Pink food coloring as needed
  • Coconut flakes for sprinkling
  • Jelly beans for decoration
  • Mini marshmallows for bunny ears
  • Toothpicks for attaching ears

Method
 

  1. Prepare cake batter according to package directions.
  2. Bake cupcakes according to package directions. Let cool completely.
  3. Tint frosting pink with food coloring.
  4. Frost each cupcake with pink frosting.
  5. Sprinkle coconut flakes over the frosting.
  6. Cut mini marshmallows in half diagonally to create bunny ears. Attach to toothpicks.
  7. Insert marshmallow ears into the top of each cupcake.
  8. Place a jelly bean in the center of each cupcake for the bunny's nose.

Notes

For a richer flavor, use a cream cheese frosting instead of vanilla.
