Method
- Prepare cake batter according to package directions.
- Bake cupcakes according to package directions. Let cool completely.
- Tint frosting pink with food coloring.
- Frost each cupcake with pink frosting.
- Sprinkle coconut flakes over the frosting.
- Cut mini marshmallows in half diagonally to create bunny ears. Attach to toothpicks.
- Insert marshmallow ears into the top of each cupcake.
- Place a jelly bean in the center of each cupcake for the bunny's nose.
Notes
For a richer flavor, use a cream cheese frosting instead of vanilla.
