EASY CHEESY SCALLOPED POTATOES RECIPE

Ingredients
  

Potatoes
  • 2 lb russet or yukon gold potatoes about 4-6 potatoes
White Sauce
  • 1/4 cup unsalted butter 56g
  • 1/4 cup all purpose flour 28g
  • 2 tsp minced garlic
  • 0.5 tsp salt less if you're adding parmesan cheese
  • 0.5 tsp pepper
  • 1 tsp chili flakes
  • 0.5 tsp paprika
  • 2.5 cups whole milk more can be added if you want a more saucy outcome
  • 1 cup mixed shredded cheese I used equal parts of cheddar, mozzarella and parmesan
Caramelized Onions
  • 1 small onion
  • 2 tbsp olive oil
Cheese Topping
  • 1 cup mixed shredded cheese
Garnish
  • Chopped fresh parsley for garnish

Method
 

  1. Pre-heat oven to 350F and brush butter in a casserole pan.
  2. Prepare the white sauce: Melt butter, add flour, garlic, spices, milk, and cheeses. Stir until melted. Adjust seasoning.
  3. Caramelize thinly sliced onion in olive oil until soft and golden.
  4. Wash and thinly slice the potatoes into 3mm thick slices.
  5. Assemble: Add sauce to the bottom, layer potatoes with sauce, add caramelized onions, and cover with remaining sauce.
  6. Bake until potatoes are tender (45-60 minutes). Check with a fork.
  7. Sprinkle cheese on top and broil for 3-5 minutes until melted.
  8. Garnish with chopped parsley.
  9. Serve and enjoy!

Notes

For a richer flavor, use a combination of Gruyere and Parmesan cheese in the sauce.
