Method
- Spray slow cooker or insert liner.
- Sauté onion in 2 tbsp butter for 4 minutes. Add garlic, cook 1 minute.
- Add remaining butter, whisk in flour, cook 1 minute.
- Whisk in cream, thyme, salt, and pepper. Simmer until thickened.
- Stir in cheddar and Gruyère until melted.
- Layer potatoes and cheese sauce in slow cooker.
- Cover and cook on LOW for 6–7 hours until potatoes are tender.
- Let rest uncovered for 15–20 minutes before serving.
Notes
For a richer flavor, use a combination of sharp cheddar and smoked Gouda.
