  • 4 large Russet potatoes peeled and thinly sliced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese
  • 2.5 cups heavy cream
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 5 tbsp unsalted butter
  • 1.5 tbsp all-purpose flour
  • 2 tsp chopped fresh thyme
  • 1.5 tsp salt
  • 1 tsp black pepper
  • Nonstick spray or slow cooker liner

Method
 

  1. Spray slow cooker or insert liner.
  2. Sauté onion in 2 tbsp butter for 4 minutes. Add garlic, cook 1 minute.
  3. Add remaining butter, whisk in flour, cook 1 minute.
  4. Whisk in cream, thyme, salt, and pepper. Simmer until thickened.
  5. Stir in cheddar and Gruyère until melted.
  6. Layer potatoes and cheese sauce in slow cooker.
  7. Cover and cook on LOW for 6–7 hours until potatoes are tender.
  8. Let rest uncovered for 15–20 minutes before serving.

Notes

For a richer flavor, use a combination of sharp cheddar and smoked Gouda.
