Method
- Peel and halve potatoes. Boil in water for 20-25 minutes until tender. Drain and cool.
- Whisk together mayo, vinegar, mustard, relish, and salt.
- Cut cool potatoes into 1/2 to 1-inch pieces.
- Combine potatoes, onion, and celery in a bowl. Toss with dressing. Chill for 1-2 hours.
Notes
For a tangier flavor, add a bit more vinegar or mustard.
