- Place beef chunks in slow cooker, add vegetables, broth, soy sauce, thyme, salt, and pepper. Stir to combine.
- Cover and cook on low for 7-8 hours until beef is tender.
- Stir in egg noodles and cook for 30 minutes until tender. Thicken with cornstarch slurry if desired.
- Serve hot, garnished with chopped parsley.
Notes
For a thicker sauce, add cornstarch slurry during the last 30 minutes of cooking.
