Ingredients
  

Meat
  • 2 pounds beef chuck roast, cut into chunks
  • 1 unit onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons cornstarch (optional, for thickening)
  • 1 bunch Fresh parsley, chopped (for garnish)

Method
 

  1. Place beef chunks in slow cooker, add vegetables, broth, soy sauce, thyme, salt, and pepper. Stir to combine.
  2. Cover and cook on low for 7-8 hours until beef is tender.
  3. Stir in egg noodles and cook for 30 minutes until tender. Thicken with cornstarch slurry if desired.
  4. Serve hot, garnished with chopped parsley.

Notes

For a thicker sauce, add cornstarch slurry during the last 30 minutes of cooking.
