Bananas
  • 1.5 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 0.33 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp cinnamon (optional)
  • 0.5 cup chopped nuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mash bananas until smooth, then mix in sugar and melted butter.
  3. Add eggs and vanilla, then stir in dry ingredients until just combined.
  4. Fold in nuts or chocolate chips if using, then fill muffin cups ¾ full.
  5. Bake for 18-22 minutes, cool for 5 minutes, then transfer to wire rack.

Notes

For extra flavor, add a pinch of cinnamon or some chocolate chips.
