  • 2 ripe bananas mashed
  • 1 egg
  • 45 g sugar-free vanilla yogurt
  • 24 g powdered peanut butter
  • 40 g coconut flour
  • 2-3 tbsp sugar-free vanilla or cinnamon syrup
  • 1 packet stevia packet
  • 5 g baking powder

Method
 

  1. Preheat oven to 350°F and prepare loaf pan.
  2. Mash bananas in a bowl.
  3. Add coconut flour and baking powder, stirring to avoid clumps.
  4. Add egg, yogurt, peanut butter, syrup, and stevia. Stir well.
  5. Pour batter into pan and smooth the top.
  6. Bake for 20 minutes or until golden brown.
  7. Cool in pan for 10 minutes, then transfer to a rack.

Notes

For a richer flavor, add a dash of cinnamon or nutmeg to the batter.
