Method
- Preheat oven to 350°F and prepare loaf pan.
- Mash bananas in a bowl.
- Add coconut flour and baking powder, stirring to avoid clumps.
- Add egg, yogurt, peanut butter, syrup, and stevia. Stir well.
- Pour batter into pan and smooth the top.
- Bake for 20 minutes or until golden brown.
- Cool in pan for 10 minutes, then transfer to a rack.
Notes
For a richer flavor, add a dash of cinnamon or nutmeg to the batter.
