Ingredients
  

Zucchini
  • 4 medium zucchinis firm and fresh
  • 2 tablespoons olive oil extra virgin preferred
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
Salad
  • 1 cup cherry tomatoes halved
  • 0.5 small red onion thinly sliced
  • 0.5 cup feta cheese crumbled; can substitute with goat cheese or vegan cheese
  • 0.25 cup fresh basil leaves chopped or torn
  • 1 tablespoon fresh parsley chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar or red grape juice vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • to taste Salt and pepper

Method
 

  1. Wash and trim zucchinis. Slice lengthwise into thin strips.
  2. Place zucchini in a bowl, drizzle with olive oil, salt, pepper, and garlic powder. Toss well.
  3. Preheat grill over medium-high heat. Lightly oil the grates.
  4. Grill zucchini for 2-3 minutes per side until tender and charred. Remove and cool.
  5. Whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.
  6. Cut zucchini into bite-sized pieces. Add tomatoes, red onion, feta, basil, and parsley. Drizzle with dressing and toss.
  7. Transfer to a platter, garnish, and serve.

Notes

For a vegan option, substitute feta cheese with a plant-based alternative.
