Method
- Wash and trim zucchinis. Slice lengthwise into thin strips.
- Place zucchini in a bowl, drizzle with olive oil, salt, pepper, and garlic powder. Toss well.
- Preheat grill over medium-high heat. Lightly oil the grates.
- Grill zucchini for 2-3 minutes per side until tender and charred. Remove and cool.
- Whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.
- Cut zucchini into bite-sized pieces. Add tomatoes, red onion, feta, basil, and parsley. Drizzle with dressing and toss.
- Transfer to a platter, garnish, and serve.
Notes
For a vegan option, substitute feta cheese with a plant-based alternative.
