Method
- Brown ground beef in olive oil, then drain excess fat.
- Sauté onions and garlic until softened.
- Transfer to slow cooker, add vegetables, tomatoes, broth, herbs, salt, and pepper. Stir well.
- Cook on low for 7-8 hours or high for 3-4 hours until vegetables are tender.
- Adjust seasonings and serve hot.
Notes
You can add other vegetables like celery or green beans for variety.
