Ingredients
  

Meat
  • 1 lb ground beef
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 medium carrots, peeled and chopped
  • 2 medium potatoes, peeled and diced
  • 1 cup frozen peas
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste Salt and pepper
  • 2 tbsp olive oil

Method
 

  1. Brown ground beef in olive oil, then drain excess fat.
  2. Sauté onions and garlic until softened.
  3. Transfer to slow cooker, add vegetables, tomatoes, broth, herbs, salt, and pepper. Stir well.
  4. Cook on low for 7-8 hours or high for 3-4 hours until vegetables are tender.
  5. Adjust seasonings and serve hot.

Notes

You can add other vegetables like celery or green beans for variety.
