Irish Apple Cake Recipe

Ingredients
  

Cake Ingredients
  • 4 oz butter softened
  • 4 oz caster sugar
  • 2 large eggs
  • 6 oz self-raising flour
  • 1 tsp baking powder
  • 2 medium apples peeled, cored and chopped
  • 2 tbsp milk
  • 1 tbsp demerara sugar for topping
  • 1 tsp cinnamon Optional

Method
 

  1. Preheat oven to 180°C. Grease and flour a 20cm cake tin.
  2. Cream butter and caster sugar until light and fluffy.
  3. Beat in the eggs one at a time.
  4. Sift in flour and baking powder; fold in gently.
  5. Stir in chopped apples, milk, and cinnamon (if using).
  6. Pour mixture into tin; sprinkle with demerara sugar.
  7. Bake for 30-40 minutes, until golden brown.
  8. Cool in tin for 10 minutes, then cool completely on a rack.
  9. Serve warm or cold, optionally with custard or cream.

Notes

For a richer flavor, use brown butter instead of softened butter.
