Method
- Preheat oven to 180°C. Grease and flour a 20cm cake tin.
- Cream butter and caster sugar until light and fluffy.
- Beat in the eggs one at a time.
- Sift in flour and baking powder; fold in gently.
- Stir in chopped apples, milk, and cinnamon (if using).
- Pour mixture into tin; sprinkle with demerara sugar.
- Bake for 30-40 minutes, until golden brown.
- Cool in tin for 10 minutes, then cool completely on a rack.
- Serve warm or cold, optionally with custard or cream.
Notes
For a richer flavor, use brown butter instead of softened butter.
