Ingredients
  

Cookie Dough
  • 1 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons lemon zest about 2 lemons
  • 0.25 cup fresh lemon juice
  • 4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking soda
Coating
  • 0.5 cup powdered sugar
  • 0.5 cup granulated sugar

Method
 

  1. Cream butter and sugar until light and fluffy.
  2. Add eggs, vanilla, lemon zest, and lemon juice; mix well.
  3. Whisk flour, baking powder, salt, and baking soda. Slowly add to wet ingredients until just combined.
  4. Chill dough for at least 30 minutes.
  5. Preheat oven to 350°F (175°C).
  6. Place granulated and powdered sugar in separate bowls.
  7. Roll dough into balls, then roll in granulated sugar and powdered sugar.
  8. Place on parchment-lined baking sheet and bake for 10-12 minutes.
  9. Cool on baking sheet, then transfer to a wire rack to cool completely.

Notes

For best results, chill the dough overnight.
