Lemon Curd Shortbread Cookies

Delightful shortbread cookies filled with tangy lemon curd. These cookies are perfect for afternoon tea or a sweet treat.

Ingredients
  

Shortbread Dough
  • 1 cup unsalted butter softened
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
Filling & Decoration
  • 1/2 cup lemon curd store-bought or homemade
  • Powdered sugar for dusting (optional)

Method
 

  1. Preheat oven to 325°F (160°C).
  2. Cream butter and powdered sugar until fluffy.
  3. Add salt and mix.
  4. Gradually add flour, mix until just combined.
  5. Roll dough to 1/4 inch thickness.
  6. Cut out shapes with cookie cutters.
  7. Place cookies on parchment-lined baking sheet.
  8. Bake for 15-20 minutes until lightly golden.
  9. Cool on baking sheet, then transfer to wire rack.
  10. Spread lemon curd on half of the cookies.
  11. Top with remaining cookies to make sandwiches.
  12. Dust with powdered sugar, if desired, and serve.

Notes

For a richer flavor, use European-style butter.
