Linzer Cookies

Delight in these classic sandwich cookies with a fruity jam filling and a dusting of powdered sugar.

Ingredients
  

Dough
  • 1 cup unsalted butter, softened
  • cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely ground almonds or hazelnuts
  • ¼ teaspoon salt
  • ½ cup raspberry or strawberry jam
  • powdered sugar for dusting

Method
 

  1. Cream butter and sugar until fluffy. Add egg yolk and vanilla.
  2. Mix in flour, nuts, and salt until dough forms. Chill for 1 hour.
  3. Roll dough ⅛ inch thick. Cut into solid rounds and shapes with centers.
  4. Bake at 350°F (175°C) for 8–10 minutes until edges are golden.
  5. Cool, spread jam on solid cookies, top with cutouts, and dust with powdered sugar.

Notes

Chill the dough thoroughly for best results and use a small cookie cutter for the center shapes.
