Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raspberry or apricot jam
  • powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Cream butter and sugar until light; add egg, vanilla, almond, cinnamon, and salt, mix well.
  3. Gradually mix in flour to form a soft dough; chill for 30 minutes.
  4. Roll out dough, cut shapes, and cut out centers of half the cookies.
  5. Bake for 10-12 minutes; cool, spread jam on solid cookies, top with cut-outs, and dust with powdered sugar.
