  • 5 lbs Yukon Gold potatoes scrubbed
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 6 slices turkey bacon cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, salt, and pepper.
  3. Bake for 45-60 minutes, or until potatoes are tender.
  4. Prepare dressing: whisk mayonnaise, sour cream, milk, vinegar, garlic powder, and onion powder.
  5. Cut potatoes into bite-sized pieces and add to the dressing.
  6. Stir in bacon, cheese, and green onions.
  7. Refrigerate for at least 30 minutes before serving.
  8. Serve chilled.

Notes

For a vegetarian option, omit the turkey bacon or substitute with plant-based bacon alternatives.
