  • 3 lbs Yukon Gold potatoes thinly sliced
  • 1 large onion thinly sliced
  • 3 cups shredded sharp cheddar cheese
  • 1.5 cups heavy cream
  • 0.5 cup milk
  • 3 tbsp butter melted
  • 2 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp nutmeg

Method
 

  1. Grease your slow cooker with butter or cooking spray
  2. Layer half the potatoes, half the onions, and half the cheese in the slow cooker
  3. Repeat layers with remaining potatoes, onions and cheese
  4. Whisk together cream, milk, melted butter, garlic, salt, pepper and nutmeg
  5. Pour mixture evenly over the potatoes
  6. Cook on high for 4 hours or low for 7-8 hours until potatoes are tender
  7. Let stand for 10 minutes before serving

Notes

For extra flavor, add a layer of cooked ham or bacon between the potato layers.
