Moist Banana Bread Recipe

This moist banana bread is perfect for using ripe bananas and makes a delicious, comforting treat.

Ingredients
  

Dry ingredients
  • 2 cups all-purpose flour spooned & leveled
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
Wet ingredients
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light or dark brown sugar, packed
  • 2 large eggs room temperature
  • 1/3 cup plain greek yogurt or full-fat sour cream
  • 1 1/2 cups mashed bananas about 3–4 ripe bananas
  • 1 teaspoon pure vanilla extract
Optional mix-ins
  • 3/4 cup chopped pecans or walnuts
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (177°C) and grease a 9×5-inch loaf pan.
  2. Mix dry ingredients in a bowl; set aside.
  3. Cream butter and sugar, add eggs, yogurt, vanilla, and bananas; combine.
  4. Combine dry and wet ingredients; fold in nuts or chocolate chips if using.
  5. Bake for 60–65 minutes, cool before slicing.

Notes

For extra flavor, add a handful of nuts or chocolate chips.
