  • 2 lbs Yukon Gold potatoes peeled and thinly sliced (about 1/8 inch thick)
  • 4 tbsp butter divided
  • 1 medium yellow onion thinly sliced
  • 2 cloves garlic minced
  • 1/4 cup gluten-free all-purpose flour blend
  • 3 cups milk or dairy-free milk alternative
  • 1 cup chicken or vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 cup shredded Gruyere cheese optional, can substitute with dairy-free cheese
  • 2 tbsp chopped fresh parsley for garnish (optional)

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish with 1 tbsp of butter.
  2. Melt 2 tbsp of butter in a saucepan over medium heat. Cook onion until softened, about 5-7 minutes. Add garlic and cook for 1 minute.
  3. Stir in flour and cook for 1 minute, stirring constantly.
  4. Gradually whisk in milk and broth until smooth. Simmer until the sauce thickens, about 3-5 minutes.
  5. Remove from heat and stir in salt, pepper, and nutmeg.
  6. Layer half of the potatoes, then half of the sauce in the baking dish. Repeat with remaining potatoes and sauce.
  7. Dot with remaining butter. Sprinkle with cheese (if using).
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for 20-30 minutes, or until potatoes are tender and top is golden brown.
  10. Let rest for 10-15 minutes before serving. Garnish with parsley, if desired.

Notes

For a richer flavor, use heavy cream instead of milk. Adjust seasonings to your preference.
