Old Fashioned Scalloped Potatoes and Ham (Easy & Cheesy)

  • 4 russet potatoes medium ((peeled and sliced thin))
  • 1 small onion chopped
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 3 cups milk
  • 2 cups shredded cheese (mild or sharp cheddar, Monterey Jack, others)
  • 0.75 pound turkey ham diced or cut into small bite-size pieces ((about 3 cups; a bit more or less is fine))

Method
 

  1. Preheat oven to 350° convection or 375° conventional.
  2. Scrub, peel, and slice potatoes about ⅜ inch thick.
  3. Chop onion and slice turkey ham into bite-size pieces.
  4. Melt butter in a saucepan over medium-high heat, add onion, and cook until clearing (3–4 minutes).
  5. Sprinkle in flour and cook, whisking, for about 2 minutes until light browning.
  6. Slowly add milk while whisking. Cook until thickening well (3–4 minutes). Mix in salt and pepper.
  7. Prep a 9 by 13 inch casserole dish with butter.
  8. Layer potatoes, ham, cheese, and sauce, repeating twice. Add extra cheese to the top layer.
  9. Cover with aluminum foil.
  10. Bake 45–90 minutes covered, then 20–25 minutes uncovered until golden and bubbling. Let sit for 10 minutes before serving.

Notes

For a richer flavor, use heavy cream instead of milk.
