Method
- Preheat oven to 350°F (175°C).
- Mix mashed bananas with melted butter, then add baking soda, salt, sugar, egg, and vanilla; stir well.
- Fold in flour and walnuts (if using) until just combined.
- Pour batter into a greased loaf pan.
- Bake for 60-65 minutes; cool before slicing.
Notes
For extra flavor, add a handful of chocolate chips or dried fruit.
