  • 3 tablespoon unsalted butter plus more for greasing
  • 0.25 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup vegetable broth
  • 4 garlic cloves grated
  • 1 tbsp fresh thyme leaves chopped
  • 2 tbsp sea salt
  • 0.5 teaspoon freshly ground black pepper
  • 3 Yukon Gold potatoes sliced ⅛-inch thick
  • 0.5 medium yellow onion thinly sliced
  • 1.5 cups grated cheddar cheese (or your preferred cheese)

Method
 

  1. Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish with butter
  2. Make the sauce: Melt butter, add flour and whisk for 1 minute. Slowly add milk and broth while whisking. Add garlic, thyme, salt, and pepper. Cook for 2-3 minutes until thickened. Remove from heat
  3. Layer half the potatoes in the dish. Top with half the onions, then half the sauce. Add 1 cup of cheese
  4. Add the remaining potatoes, onions, sauce, and cheese. Cover and bake for 30 minutes. Uncover and bake for 35-40 minutes until potatoes are tender and cheese is golden
  5. Rest and serve: Let stand for 20 minutes before slicing and serving

Notes

For a richer flavor, use a blend of Gruyere and Parmesan cheese in addition to cheddar.
