Method
- Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish with butter
- Make the sauce: Melt butter, add flour and whisk for 1 minute. Slowly add milk and broth while whisking. Add garlic, thyme, salt, and pepper. Cook for 2-3 minutes until thickened. Remove from heat
- Layer half the potatoes in the dish. Top with half the onions, then half the sauce. Add 1 cup of cheese
- Add the remaining potatoes, onions, sauce, and cheese. Cover and bake for 30 minutes. Uncover and bake for 35-40 minutes until potatoes are tender and cheese is golden
- Rest and serve: Let stand for 20 minutes before slicing and serving
Notes
For a richer flavor, use a blend of Gruyere and Parmesan cheese in addition to cheddar.
