Scalloped Potatoes And Ham

  • cup butter
  • 1 small onion sliced
  • 2 cloves garlic minced
  • cup all-purpose flour
  • 2 cups milk
  • 1 ½ cups chicken stock
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 3 pounds Yukon Gold or Russet potatoes cut into ⅛ inch-thick slices
  • 2 cups diced turkey ham
  • 1 cup shredded cheddar cheese

Method
 

  1. Preheat oven to 375°F and grease a 9 by 13-inch casserole dish.
  2. Melt butter in a skillet over medium heat. Add onions and cook for 4-5 minutes until softened. Add garlic and cook for 30 seconds.
  3. Stir in flour and mix until well incorporated.
  4. Whisk constantly, add milk, followed by chicken stock, salt, pepper, and thyme. Cook until the mixture boils and boil for 1 minute. Remove from heat.
  5. To the casserole dish, add 1/3 of the potatoes, followed by 1/3 of the turkey ham, and 1/3 of the sauce. Repeat for a total of three layers.
  6. Cover with foil and bake for 35 minutes. Remove the foil and sprinkle cheddar cheese on top. Bake uncovered for another 20-30 minutes until the potatoes are tender. Enjoy!

Notes

For a richer flavor, use heavy cream instead of milk.
