Method
- Preheat oven to 375°F (190°C). Grease a small baking dish.
- Melt butter in a saucepan. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Simmer, stirring, until thickened.
- Remove from heat and stir in salt and pepper.
- Layer half of the potatoes, then half of the onion in the baking dish. Pour half of the sauce over.
- Repeat layers with the remaining potatoes, onions, and sauce.
- If using cheese, sprinkle it over the top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 15-20 minutes, until potatoes are tender and top is golden brown.
- Let stand for 10 minutes before serving.
Notes
For a richer flavor, use heavy cream instead of milk. Add a pinch of nutmeg to the sauce for extra warmth.
