  • 1 pound Yukon Gold potatoes peeled and thinly sliced
  • 1/2 small yellow onion thinly sliced
  • 1.5 cups milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup shredded cheddar cheese optional

Method
 

  1. Preheat oven to 375°F (190°C). Grease a small baking dish.
  2. Melt butter in a saucepan. Whisk in flour and cook for 1 minute.
  3. Gradually whisk in milk until smooth. Simmer, stirring, until thickened.
  4. Remove from heat and stir in salt and pepper.
  5. Layer half of the potatoes, then half of the onion in the baking dish. Pour half of the sauce over.
  6. Repeat layers with the remaining potatoes, onions, and sauce.
  7. If using cheese, sprinkle it over the top.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for another 15-20 minutes, until potatoes are tender and top is golden brown.
  10. Let stand for 10 minutes before serving.

Notes

For a richer flavor, use heavy cream instead of milk. Add a pinch of nutmeg to the sauce for extra warmth.
