Ingredients
  

Protein
  • 2 pounds boneless, skinless chicken breasts
Canned Goods
  • 1 can black beans, rinsed and drained 15 oz can
  • 1 can kidney beans, rinsed and drained 15 oz can
  • 1 can diced tomatoes with green chilies 15 oz can
Vegetables
  • 1 cup corn (fresh, frozen, or canned)
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
Spices & Broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 1 cup chicken broth
Optional toppings
  • shredded cheese, sour cream, chopped cilantro for serving

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Add beans, tomatoes, corn, onion, and garlic on top.
  3. Sprinkle spices and pour broth over ingredients.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Shred chicken, stir into chili, and serve with toppings.

Notes

Shredding the chicken before serving enhances the texture and flavor.
