Main
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf bay leaf
  • to taste Salt and pepper
  • 1 cup egg noodles (optional)
  • for garnish Fresh parsley, chopped

Method
 

  1. Place chicken breasts in the slow cooker and add broth, vegetables, herbs, and seasonings.
  2. Cover and cook on low for 6-8 hours or high for 4-5 hours until chicken is cooked.
  3. Remove chicken, shred with forks, and return to the slow cooker.
  4. Add egg noodles if using, cover, and cook for 30 minutes until tender.
  5. Remove bay leaf, adjust seasoning, and garnish with parsley before serving.
