Method
- Combine potatoes, ham, cheese, and onion in a bowl.
- Mix sour cream, soup, milk, garlic, salt, pepper, and thyme in another bowl.
- Pour soup mixture over potato mixture and stir.
- Transfer to a greased slow cooker.
- Cook on low for 6-8 hours until potatoes are tender.
- Stir in parsley before serving.
- Serve hot.
Notes
For a richer flavor, use a combination of cheddar and Gruyere cheese.
