Ingredients
  

Dried Lentils
  • 1 cup brown or green lentils, rinsed
  • 1 medium onion, chopped
  • 2 carrots diced carrots
  • 2 celery stalks diced celery stalks
  • 3 garlic cloves minced garlic
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon cumin
  • 1 bay leaf bay leaf
  • to taste Salt and pepper Salt and pepper
  • 2 cups spinach or kale (optional)
  • 1 tablespoon olive oil

Method
 

  1. Combine all ingredients except greens and olive oil in the slow cooker.
  2. Stir in olive oil and cook on low for 6-8 hours.
  3. During last 30 minutes, add greens if using.
  4. Remove bay leaf, adjust seasoning, and serve hot.
