  • 0.5 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.25 cup light brown sugar packed
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • Powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in egg, lemon juice, lemon zest, and vanilla extract.
  4. Whisk together flour, baking soda, and salt in a separate bowl.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Roll dough into 1-inch balls and place on baking sheets.
  7. Bake for 9-11 minutes, or until edges are lightly golden.
  8. Cool on baking sheets before transferring to a wire rack.
  9. Dust with powdered sugar before serving.

Notes

For extra lemony flavor, add a teaspoon of lemon extract to the dough.
