Sour Cream Potato Salad

  • 4 cups baby potatoes rinsed well
  • 1/3 cup sour cream
  • 1/2 lemon Juice and zest from
  • 1/4 cup fresh dill chopped
  • 1 shallot peeled and chopped
  • Sea salt and pepper

Method
 

  1. Boil potatoes until tender, about 10 minutes. Drain and cool.
  2. Cut potatoes in half and place in a mixing bowl.
  3. Add sour cream and toss until coated.
  4. Add lemon juice and zest, dill and shallot and toss. Season with salt and pepper.
  5. Serve immediately or chill in the fridge.

Notes

For a richer flavor, use full-fat sour cream.
