Ingredients
  

Crust
  • 1 1/4 cups plain flour
  • 1/2 cup traditional oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter, softened
Filling
  • 8 ounces softened cream cheese
  • 3/4 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon ground cinnamon
  • 1/6 teaspoon ground nutmeg
  • 1 1/2 cups diced rhubarb

Method
 

  1. Preheat oven to 350°F (175°C). Prepare the crust by combining flour, oats, brown sugar, salt, and butter.
  2. Press the crust mixture into the bottom of a baking pan.
  3. In a separate bowl, beat cream cheese and white sugar until smooth. Mix in egg and vanilla.
  4. Stir in cinnamon, nutmeg, and rhubarb.
  5. Pour the cream cheese mixture over the crust.
  6. Bake for 35 minutes, or until golden brown.
  7. Let cool completely before cutting into bars.

Notes

For a richer flavor, use a high-quality vanilla extract. You can also add a streusel topping for extra sweetness and texture.
