  • 2 lbs Yukon Gold potatoes peeled and cubed
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup sweet pickle relish
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 hard-boiled eggs peeled and chopped
  • 1 tablespoon white vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Paprika for garnish (optional)

Method
 

  1. Boil potatoes until tender, about 10-12 minutes. Drain and cool.
  2. Whisk together mayonnaise, mustard, relish, celery, onion, vinegar, sugar, salt, and pepper.
  3. Fold in potatoes and eggs.
  4. Refrigerate for at least 2 hours.
  5. Adjust seasonings and garnish with paprika if desired.
  6. Enjoy!

Notes

For a tangier flavor, add a bit more vinegar or mustard.
