  • 2 lbs Yukon Gold potatoes peeled and cubed
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup sweet pickle relish
  • 2 hard-boiled eggs chopped
  • 1/4 cup red onion finely chopped
  • 2 tablespoons celery finely chopped
  • 1 tablespoon white vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika optional, for garnish

Method
 

  1. Place potatoes in a pot, cover with cold water, add salt.
  2. Boil until tender, 10-15 minutes. Drain and cool.
  3. Whisk mayonnaise, mustard, relish, vinegar, salt, and pepper in a bowl.
  4. Fold in potatoes, eggs, onion, and celery.
  5. Mix well, being careful not to mash the potatoes.
  6. Refrigerate for at least 2 hours.
  7. Stir and garnish with paprika, if desired.

Notes

For a tangier flavor, add a tablespoon of lemon juice.
