Method
- Place potatoes in a pot, cover with cold water, add salt.
- Boil until tender, 10-15 minutes. Drain and cool.
- Whisk mayonnaise, mustard, relish, vinegar, salt, and pepper in a bowl.
- Fold in potatoes, eggs, onion, and celery.
- Mix well, being careful not to mash the potatoes.
- Refrigerate for at least 2 hours.
- Stir and garnish with paprika, if desired.
Notes
For a tangier flavor, add a tablespoon of lemon juice.
