  • 3 lbs Russet potatoes peeled and thinly sliced (about 1/8 inch thick)
  • 2 cups diced cooked turkey ham leftover turkey ham works well
  • 1 medium yellow onion thinly sliced
Cheese Sauce
  • 0.5 cup unsalted butter (1 stick)
  • 0.5 cup all-purpose flour
  • 4 cups whole milk warmed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg
  • 2 cups shredded sharp cheddar cheese divided
  • 1 cup shredded Gruyère cheese (or Swiss cheese)

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Melt butter in a saucepan over medium heat. Add onion and cook until soft, about 5 minutes.
  3. Whisk flour into butter and onions. Cook, stirring constantly, for 1 minute.
  4. Gradually whisk in warm milk until smooth. Simmer, stirring often, until thickened, about 5-7 minutes.
  5. Remove from heat. Stir in salt, pepper, nutmeg, 1 cup cheddar, and Gruyère cheese until melted.
  6. In the baking dish, layer half the potatoes, half the ham, and half the cheese sauce.
  7. Repeat the layering process: remaining potatoes, remaining ham, and the rest of the cheese sauce.
  8. Cover with foil. Bake for 45 minutes.
  9. Remove foil. Sprinkle with remaining cheddar. Bake uncovered for 15-20 minutes, until potatoes are tender and top is golden brown.
  10. Let rest for 10 minutes before serving.

Notes

For a richer flavor, use a combination of Gruyère and Parmesan cheese in the sauce.
