Method
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Melt butter in a saucepan over medium heat. Add onion and cook until soft, about 5 minutes.
- Whisk flour into butter and onions. Cook, stirring constantly, for 1 minute.
- Gradually whisk in warm milk until smooth. Simmer, stirring often, until thickened, about 5-7 minutes.
- Remove from heat. Stir in salt, pepper, nutmeg, 1 cup cheddar, and Gruyère cheese until melted.
- In the baking dish, layer half the potatoes, half the ham, and half the cheese sauce.
- Repeat the layering process: remaining potatoes, remaining ham, and the rest of the cheese sauce.
- Cover with foil. Bake for 45 minutes.
- Remove foil. Sprinkle with remaining cheddar. Bake uncovered for 15-20 minutes, until potatoes are tender and top is golden brown.
- Let rest for 10 minutes before serving.
Notes
For a richer flavor, use a combination of Gruyère and Parmesan cheese in the sauce.
